A taxonomy within WordPress is a way of grouping posts together based on a select number of relationships. By default, a standard post will have two taxonomy types called Categories and Tags which are a handy way of ensuring related content on your website is easy for visitors to find. These two types of taxonomies are included in WordPress by default, but just like any other taxonomy, can be removed or changed and you can even add more if you like.  (official doc)

How do I find taxonomy in WordPress?
 
 In WordPress, you can create (or “register”) a new taxonomy by using the register_taxonomy() function. Each taxonomy option is documented in detail in the WordPress Codex. After adding this to your theme's functions. php file, you should see a new taxonomy under the “Posts” menu in the admin sidebar  (google)
 
How do I create a custom taxonomy in WordPress without Plugin?
 
 If you are a WordPress Developer and don't want to install any WordPress plugin to create custom Taxonomy, then you can create manually by adding the required code in your theme's functions. php file.  (google)
